Hi,
Personally I would add 5 videos and 5 photosets, with different themes, before launching. The more content you have the better to be honest because it will encourage people to sign up from launch day, rather than waiting for more content to arrive

I started with one video, and built from there. Just get going, don't hesitate. I do agree with Elizabethhunny that more content is better, though.
